One problem is that until fairly recently most of the instant coffee available was not organic.  This means that it was most likely sprayed with pesticides and processed with chemicals.  Fortunately you don’t have to drink this stuff anymore, and there are a few really good companies that focus on selling organic instant coffee.  Here are the most popular ones.
